Serves 4

This is the first non-veg dish I ever made, and it’s so quick and easy, that when I told a beginner about it once, she remarked to her husband ‘Oh then we should make it often!’
Try it, and I’m sure you’ll share the sentiment!

Ingredients:
? kg prawns, deshelled and deveined
15-20 garlic cloves, chopped
? cup chopped coriander leaves
3 tbsp butter
Salt to taste
Method:

* Heat the butter and add the garlic and half of the coriander. Stir and cook on a low flame for a few seconds.
* Add the prawns and salt, and stir. Fresh prawns will be done in less than 2 minutes, but frozen ones will take longer. You know it is cooked when the prawns turn pink.
* Take it off the flame, stir in the remaining coriander and serve.

hi,
Ingredients
Serves 2 (main course salad)

10 -14 raw king prawns (shelled, de-veined)
1 red chilli pepper, finely sliced
2 cloves of garlic, crushed
about 1tbsp of butter + 1tbsp olive oil
Some balsamic vinegar
Salt and pepper

3-4 handfuls of mixed leaf salad (rucola, spinach, mangold, oak leaf lettuce etc)
4 baby vine tomatoes
6cm chunk of cucumber, sliced
2 spring onions, sliced
4 stuffed chilli peppers (home made or ready bought, filled with flavoured feta cheese)

Method
1. Prepare the salad ingredients and arrange on a plate.
2. Heat the butter and olive oil over a low heat, till butter just starts to melt.
3. Add the chilli slices and the garlic and fry gently for about 30 seconds.
4. Add the prawns to the pan, season with a little salt and pepper and fry over a medium heat till prawns are pink and completeley cooked (stir regularly).
5. Remove the prawns from the pan and arrange over the salad.
6. You can now either drizzle the salad with cold balsamic vinegar OR deglaze the pan with the vinegar, then drizzle over the salad just before serving (my preference).
