Pecan Pralines

1 cp.    brown sugar
1/2 cp.  granulated sugar
1/2 cp.  water
1/2 cp.  heavy whipping cream
1 1/2 cp. whole pecans
butter to grease(or cooking spray)

Place brown sugar, gran. sugar, water, and whipping cream in medium sauce pan over moderate heat, stirring often.  Cook to soft ball stage: 234 - 240 degrees(8-10 mins).

Remove from heat.  Beat with electric mixer 2-3 mins until smooth.  Stir in all pecans.  Drop spoonfuls onto buttered sheet pan to cool.  Enjoy!

Herb Roasted Turkey

3/4 cp.  olive oil
2 tbsp.  garlic powder
2 tsp.  dried basil
1 tsp.  ground sage
1 tsp.  salt
1/2 tsp. black pepper
2 cp.    water
1 (12 pound) whole turkey

Preheat oven to 325 degrees F (165 degrees C). Clean turkey (discard giblets and organs), and place in a roasting pan with a lid. In a small bowl, combine olive oil, garlic powder, dried basil, ground sage, salt, and black pepper. Using a basting brush, apply the mixture to the outside of the uncooked turkey. Pour water into the bottom of the roasting pan, and cover.
Bake for 3 to 3 1/2 hours, or until the internal temperature of the thickest part of the thigh measures 180 degrees F (82 degrees C). Remove bird from oven, and allow to stand for about 30 minutes before carving.

Spinach Dip

16 oz. Sour Cream
1 oz. packet Ranch dip mix
16 oz. frozen Spinach, chopped
1 small Tomato, diced
1/2 small onion, diced
2 tbsp. bacon bits
1/3 cp. grated cheese

Take frozen spinach out of package and place in strainer.  Run cold water over spinach to thaw it.  While spinach is thawing, mix Ranch dip mix in with sour cream, then mix in tomato, onion, cheese and bacon bits, only adding a little at a time, then stirring.  Once spinach is thawed you will need to remove excess water.  The easiest way to do this is to pick up spinach by the handful and squeeze.  Once water has been removed, stir into dip.  When the first handful has been mixed in squeeze next handful and continue process until all spinach is mixed into dip.  Refridgerate 30 min. then serve with chips or crackers.

Antman22’s Scrambled Eggs

4 eggs
Cheese

Crack eggs, mix up with cheese, plop in pan, scramble and cook. Then do the hokey pokey and turn yourself around, and that’s what its all about!  :D 😛
